Hackbraten (German Meatloaf)

Method

1. Preheat the oven. 180 °C / 350 °F, top and bottom heat.
2. Soak the roll. Let it sit in the milk until soft, then squeeze it out well.
3. Sweat the onion. Dice finely and cook in a little butter until translucent. Cool briefly.
4. Mix everything. Knead the meat, roll, onion, eggs, mustard, tomato paste, spices and chopped parsley together thoroughly.
5. Shape. Form a loaf about 25 cm / 10 in long and set it on a baking sheet lined with parchment.
6. Bake. Stir ketchup and mustard together, brush over the loaf and bake 60 to 70 minutes. Glaze once more halfway through.
7. Rest. Cover and rest 10 minutes, then slice.
