Since ’tis the season to bake some cookies, my fiancée and I made some cinnamon star cookies. Well, she made them. I filmed. Cinnamon star cookies are some softer cookies with a meringue like topping. I quite enjoy them, even if I’m usually not much of a cookie mon… eater.
Ingredients (for about 2 Trays):
450 grams (15.9oz) | Ground almonds |
300 grams (12.1oz) | powdered sugar |
4 | Egg whites |
1 pinch | table salt |
1 tablespoon | Lemon juice |
Zest of 1 Lemon | |
2 teaspoons | ground cinnamon |
- Add the egg whites and the pinch of salt to a bowl. Beat them until they are very stiff.
- Slowly add the powdered sugar. Make sure it is free of clumps, otherwise sift before adding. Keep stirring until well combined.
- Stir in the lemon juice
- Put away about 4 tablespoons as frosting for later.
- Add the lemon zest
- Add the ground almonds and stir to combine. Then you can use your hands to lightly knead a dough. It should be soft and somewhat sticky.
- Preheat your oven to 160 °C (320 °F)
- Sprinkle some ground almonds on your working surface and roll out the dough to 1/2 cm (5/8 inch)
- Use a small star shaped cutter to cut out the cookies. Transfer them onto a lightly greased baking sheet lined tray.
- Use a butter knife or something alike to spread the topping from step 4 onto the cookies.
- Bake the cookies for about 20 minutes. They should be still somewhat soft.
